π Fredu’s Pizza
Fred didn’t speak while he worked. The dough spoke for him. It was early evening, and the oven had been roaring since four. The bricks behind him pulsed with heat, casting a golden glow across the flour-dusted counter. His hands moved with practiced rhythm: press, stretch, rotate, stretch again. The dough thinned like silk under his fingers.
The kitchen was small, open to the dining room, and smelled of smoke, basil, and the faint sourness of fermenting dough. An old man sat nearby sipping coffee whilst reading a newspaper. A couple sat at the far table, watching. Tourists, probably. One of them whispered something and pointed. Fred didn’t look up. He wasn’t performing. He was making pizza.
A tray of proofed rounds waited beside him, each one slightly different, some puffier, some flatter. He chose them by feel, not by sight. The one he’d just stretched was nearly ready. He lifted it gently, laid it on the peel, and reached for the sauce. Tomato, crushed by hand that morning. A ladle’s worth spiraled outward.
Then fior di latte, torn, not sliced. A few leaves of basil. No more. He slid the peel under the dough and turned toward the oven. The fire inside crackled, licking the dome. Fred leaned in, placed the pizza with a quick wrist jerk, and rotated the peel to settle it. Thirty seconds. Maybe forty. He didn’t count. He watched.
The edge began to blister, puffing into leopard-spotted crust. Cheese melted, not pooled. The basil darkened just enough. He turned the pizza once, then again. Pulled it out. Plated it. “Margherita,” he said, placing it on the counter. The waiter took it without a word. Fred wiped his hands on his apron and reached for the next ticket with “Capriciosa Large” scribbled on it.
He washed his hands, dried them with a towel, and picked up the next dough. The oven glowed behind him, steady and hot. He didn’t smile, didn’t sigh, didn’t pause. The rhythm continued. Outside, the street was quiet. Inside, the heat hummed, and the pizzaiolo stretched another round of dough, the flour rising like smoke in the firelight.
